Son \u0153uvre phare, <em>The Art of Fermentation<\/em> (James Beard Award), a inspir\u00e9 des milliers de personnes \u00e0 renouer avec les savoir-faire ancestraux. Il incarne la renaissance mondiale de la fermentation naturelle.\n      <\/p>\n    <\/div>\n  <\/div>\n\n  <blockquote>\n    \u00ab Fermenter, c\u2019est transformer. Et la transformation, c\u2019est la vie. \u00bb\n    <br><span style=\"font-size: 18px; color: #666; font-family: 'Lato', sans-serif;\">\u2014 Sandor Katz<\/span>\n  <\/blockquote>\n\n  <h2>A personal journey: From beer to sauerkraut<\/h2>\n  <p>\n    <span style=\"float: left; font-family: 'Playfair Display', serif; font-size: 60px; line-height: 50px; padding-right: 15px; color: #19ac4d; font-weight: bold;\">M<\/span>on initiation \u00e0 la fermentation s\u2019est faite, comme pour beaucoup, par la porte de la bi\u00e8re artisanale. Ce qui est paradoxal, car je n\u2019ai jamais vraiment \u00e9t\u00e9 fan de l\u2019alcool. Pourtant, c\u2019est bien cette boisson qui m\u2019a r\u00e9v\u00e9l\u00e9 un monde insoup\u00e7onn\u00e9 : celui des micro-organismes \u00e0 l\u2019\u0153uvre, de la transformation naturelle, d\u2019un \u00e9quilibre vivant entre le sucre, les levures et le temps.\n  <\/p>\n  <p>\n    Cette curiosit\u00e9 m\u2019a men\u00e9 plus loin encore, lorsque j\u2019ai crois\u00e9 un boulanger atypique dans le canton de Fribourg. Il m\u2019a initi\u00e9 \u00e0 l\u2019univers du levain avec une passion contagieuse, mais aussi \u00e0 la choucroute maison et aux umeboshis. Ce livre a marqu\u00e9 un tournant. Ce n\u2019\u00e9tait pas qu\u2019un manuel : c\u2019\u00e9tait une invitation \u00e0 red\u00e9couvrir un savoir culinaire profond\u00e9ment ancr\u00e9 dans nos traditions.\n  <\/p>\n  <p>\n    Katz \u00e9crivait avec bienveillance, sans pr\u00e9tention. Ce ton rassurant m\u2019a donn\u00e9 envie de passer \u00e0 l\u2019action. J\u2019ai pr\u00e9par\u00e9 mon premier bocal de l\u00e9gumes lactoferment\u00e9s \u2014 des courgettes. Un geste modeste, mais qui a eu un vrai impact. C\u2019est \u00e0 ce moment-l\u00e0 qu\u2019a commenc\u00e9 \u00e0 germer l\u2019id\u00e9e de Fermentierra.\n  <\/p>\n\n  <h2>Fermentation as an act of empowerment<\/h2>\n  <p>\n    Le message de Katz allait bien au-del\u00e0 de la technique. Pour lui, fermenter est un acte de r\u00e9sistance douce et de reconnexion. Cette vision m\u2019a aid\u00e9 \u00e0 comprendre que la fermentation pouvait \u00eatre un levier de changement.\n  <\/p>\n  <p>\n    C\u2019est dans cet esprit qu\u2019est n\u00e9e Fermentierra.
