Our little protégés. Several months of fermentation for an exquisite result. The beauty of candied lemon is that we also eat its melting skin. It can be surprising where it's not necessarily expected, as a slice on a pizza. It can disappear in a hummus. Its juice makes a good base for a salad dressing. I once hitchhiked to Italy to find a lemon on its tree. Exotic.
