This Suisse-Chi is more earthy than the first. The more restrained blend of spices allows the subtle shitake flavor to settle in quietly, spreading its mycelium under the cover of the first, rather pungent sensation. This is perhaps our most meditative preparation, a flash towards symbiosis. A highly original kimchi that goes perfectly with potato dishes, among others.
