Fermented mustard can be divisive, as the fermentation takes its flavors into territory not yet explored with sausages.
Our yellow mustard plays in another category.
Fermented in brine rather than prepared in vinegar, it develops a rich and almost creamy texture, where the naturally oily side of the seed comes out more. The whole seeds provide relief, while a slight bitterness prolongs the tasting.
It is less aggressive than a brown mustard, more aromatic, round and the turmeric gives it its beautiful Indian gold. For someone used to classic mustards, the first spoonful can be surprising: it almost feels like discovering another condiment.
Excellent with cheeses, in a vinaigrette, on roasted vegetables or simply with good bread.

Storage
Unpasteurized product. Preferably store in the fridge once opened.
